Heat a few Tbsp. of oil in a skillet on medium heat. Meanwhile, crack eggs into a small bowl and whisk. Put toast in toaster.
Pour eggs into skillet. Push them around a bit with a spatula and drop cheese chunks, onion, and a pinch of garlic salt on top.
Turn eggs over a few times as they cook and add avocado before completely done. Done when no longer shiny; watch carefully as it only takes a few minutes.
Butter slices of toast and place eggs on top.
Serve with fresh fruit in season.
