3/4cup(s)oat flourI grind oats in a coffee grinder

1cup(s)dark chocolatechips or chopped
1cup(s)walnutsor shelled sunflower seeds
1/2cup(s)dried cranberriesoptional
Method
Pre heat oven to 350 degrees. Blend together butter, banana, eggs, sugar, date pieces and vanilla until thoroughly combined.
Sprinkle flour, oat flour, salt and baking soda on top of butter mixture and blend in until combined. (Gluten free flour requires about 1/4 tsp. xanthum gum per cup of flour.)
Add chocolate, walnuts and cranberries. These amounts can be easily adjusted or changed based on personal preference!
Bake 12-14 minutes or until golden brown.
*Fig or coconut oil substitution: Replace banana with pureed fig. Replace olive oil with coconut oil.
* Gluten Free: Replace flour with gluten free mix plus 1/4 tsp. or xantum gum per cup of flour. Also use gluten free oats or just replace oats with more GF flour and xanthum gum.
* Replace walnuts with shelled sunflower seeds.
